Dough on a Timer: Williams Reengineers Its Crystal Bakery Cabinets

Williams Refrigeration has reengineered its Crystal bakery range — retarders, provers, freezers and dough retarder-provers — around a new DoughMaster 5 touchscreen controller. Craven Cooling looks at what it means for in-house bake-off.

The buyer’s view

Williams Refrigeration has launched a reengineered version of its Crystal bakery cabinet range, covering one- and two-door reach-in retarders, provers, freezers and dough retarder-provers — the cabinets that chill dough overnight and then wake it up in time for the morning bake.

The headline change is the controller. The new DoughMaster 5 is a touchscreen unit that manages temperature and humidity through the retarding and proving stages, and lets bakers build their own bespoke programs. Williams says each program can be assigned an image from a large library, so staff pick the right cycle by picture rather than by memorising settings — a small thing that matters at 6am with a part-time team.

The reengineered cabinets run on natural refrigerant with low global-warming potential and zero ozone-depletion potential, and Williams highlights improved energy efficiency and a cleaner hygiene design with an integral handle.

The line that caught our eye: a 13-amp plug

Buried in the announcement is the detail we think matters most for smaller sites: Williams states that even the two-door dough retarder-prover runs off a standard 13-amp supply. In plain terms, the biggest cabinet in the range plugs into a normal socket. For a café or farm shop adding in-house bake-off, that can be the difference between “delivered and working” and a rewiring quote before the first loaf.

What a retarder-prover actually does

A dough retarder-prover (DRP) holds shaped dough cold overnight — slowing fermentation — then automatically warms and humidifies it so it is proved and oven-ready when the team arrives. On the two-door RPC2T, Williams’ spec sheet gives a retarding range of −5°C to +3°C and a proving range of +38°C to +40°C, with capacity for forty 18″ × 30″ bakery trays, 75mm insulation and rated operation in ambients up to 43°C. The DoughMaster control adds intelligent steam calculation and generation, because proving is as much about humidity as heat: dry dough skins over, wet dough slumps.

The practical prize is the rota. Without a DRP, someone starts hours before opening to bring dough up to temperature. With one, the cabinet does the antisocial shift.

Craven’s verdict

This is a genuine reengineering of a specialist range rather than a facelift — the strength is control: programmable retard-and-prove cycles with proper humidity management, in cabinets that don’t demand special electrics. The caution is honest self-assessment: a DRP earns its keep only if you shape fresh dough on a daily cycle. If your “bakery” offer is frozen bake-off pastries, a standard freezer and a simple prover may serve you better for less. Best suited to bakeries, cafés and hotels producing fresh bread or pastry to a daily timetable. We covered Williams’ Jade MultiTemp launch earlier this year — Crystal continues the same pattern of flexible, connected cabinets. Craven Cooling can compare a Crystal model against your current dough routine and check the site before you commit.

The stunt — The 4am Audit: For one week, note the exact time the first baker arrives, what they do in the first two hours, and how much of it is just waiting for dough. Then walk the bake-off area and count the spare 13-amp sockets. Those two lists tell you whether a retarder-prover pays for itself in wages — bring them to us and we’ll do the sums with you.
