Why this food warming drawer earns its place
Getting plated or portioned food from prep to the pass at the right temperature is where a warming drawer earns its space. The Victor Sovereign does this by combining two things most hot cupboards don't: blown air that circulates heat evenly around the pans, and a water tray built into the base that keeps humidity in the drawer. That combination means your food holds its quality—no desiccated edges, no temperature drop during the wait.
The drawer is built for GN (gastronorm) pans in two depths: you can fit four 1/1 pans that are 100 mm deep, or two 1/1 pans at 150 mm depth. That flexibility means you can adapt to what your kitchen's holding at any given moment—whether it's plated meals, sauce pans, or prepared components waiting for service. It reaches up to 95°C, which is hot enough for safe food holding and well within catering safety standards.
At 760 mm wide and 700 mm deep, the Sovereign fits into tighter kitchen layouts than larger cupboards—it's designed to tuck into a corner or line up with other equipment without dominating the line. It's 230V electric with a standard plug, and it weighs 126 kg when in position. The 2-year warranty gives you the peace of mind that if the heating element or controls need attention, you're covered.
