Wood-fired smoking is craft, but it's also work: fuel management, temperature swings, inconsistent results. The Alto-Shaam 1200-SK trades the open-fire drama for reliability and volume. Two independent smoker compartments let you smoke beef, pork, fish, and poultry simultaneously, each at its own pace, holding 54 kg per side. Load it with real wood chips (the real driver of flavour), set the time and temperature, and the Halo Heat technology handles the smoke circulation without a fan or steam spray. No babysitting the pit. No smoke floods into the kitchen.
The control is deceptively simple: an icon-based touch interface and a single knob for temperature, smoke, and timing. Set the smoke duration (how long to infuse) separately from the hold duration (how long to keep it warm before service). Up to eight programmable recipes mean your brisket routine, your salmon routine, your chicken routine—all stored, all repeatable. Cook by time or by a single internal temperature probe, set it, and walk away. The Halo Heat technology produces the greatest yields (less moisture loss than a traditional smoker) and highest quality food, all while cutting the labour of traditional smoking equipment.
Running on 230V and 5000 W, it's a plug-and-play install—no gas, no special electrics beyond a standard circuit. At 1795 mm tall and 573 mm wide, it's lean and tall, fitting against a service wall or in a dedicated smoking station without consuming floor space. At 204 kg, it's a permanent fixture once positioned.
