Why this hook earns its place
Planetary mixers knead heavy doughs by rotating the hook attachment through multiple contact points, building gluten structure without overheating the mix. The 20-litre size is standard in mid-sized bakeries, pizzerias, and catering prep kitchens where dough production runs daily. An aluminium hook is built to handle this cycle repeatedly, working the full bowl depth and maintaining consistent contact through dense materials — bread doughs, pizza bases, laminated pastry ferments.
As a hook wears, the leading edge rounds off and loses its bite into the dough, leaving unmixed pockets and requiring the mixer to work harder to compensate. A bent hook can't work the full bowl depth. Replacement restores the precise contact that ensures even gluten development and consistent rise across batches.
