Why this gas oven earns its place
This is the workhorse of the Blue Seal Evolution range. Eight burners across the top let you run boil stations, sauces, stocks, and mise all at the same time. Two static ovens underneath — each one accepting full gastronorm pans — mean you can roast, bake, gratinée, and hold hot while the range top keeps going. That's the geometry of a busy kitchen: multiple cooking methods, one piece of kit, no shuffling equipment around during service.
The 1200 mm width is deliberate. Wide enough to spread your burner work across so staff don't crowd each other, deep enough (812 mm) to give you genuine work surface behind the rings. When you line Evolution units up, the streamlined sides lock together cleanly — you're building a continuous run, not a ragged kit shelf. LPG supply means you can place this anywhere a gas bottle reaches; the 69.2 kW rated input drives serious heat, so your installer will size the regulator and lines accordingly.
Static ovens hold temperature evenly; no convection fans hunting for equilibrium. Roasts brown consistently, pastry bakes flat. You load your pans, you know what you're getting. Two years' warranty covers parts and labour; extend to three if you want the comfort on a piece this central to your production.
