Why this combination oven earns its place
The Invoq Hybrid is the largest combi oven in the Lincat range and built for kitchens that need serious capacity without compromise. It holds 10 double-size (2/1 GN) gastronorm pans—roughly 160–180 portions in a single load—so you can batch-cook roux, reduce sauce, proof dough or hold proteins at temperature without constant resets. The energy-efficient boiler with injection steam means you control humidity precisely: high saturation for steaming seafood and vegetables, lower humidity for roasting or bread recovery. Smart sensors and integrated drain systems manage steam delivery and condensation automatically, so results stay consistent even when the kitchen's rushed.
The 400V three-phase supply draws 62.2 kW, so installation needs proper electrical planning—but you get that power for a reason. The oven reaches 30 to 300 °C and holds temperature across the whole chamber. SmartTouch control—an Android-based interface on the door—runs SmartChef pre-set recipes. If your team is new to combi cooking, this matters: recipes are baked in, so a commis can produce hotel-standard roux or perfectly steamed vegetables with minimal guesswork. The 1730 × 1077 × 1043 mm footprint (327 kg) fits a standard equipment pass-through if you plan ahead.
After a busy service, the CombiWash automatic cleaning cycle handles the steam chamber, condensation pan and internal surfaces without manual scrubbing. It uses minimal energy, water and detergent, so cleaning cost per cover stays low. Two-year parts and labour warranty covers the boiler, steam system and control board. If a fault costs you a dinner service, the parts swap and labour are covered.
