THE WORKING VIEW

Why this combination oven earns its place

This is where stacking changes the game. Two fully independent Sapiens combi ovens in a single 2040 mm tall cabinet: the top chamber holds six 1/1 GN pans, the lower chamber holds ten. Each runs its own cooking mode—convection, steam or combination—simultaneously and independently. Your mains chef roasts beef at 220°C convection in the lower oven while the pastry section finishes delicate tarts at 160°C with moisture in the upper chamber. No compromises, no waiting for mode switches. Total batch capacity is 60–80 kg stacked, enough to serve 1,000–1,300 covers if you stack batches carefully.

The touch-screen interface gives you precision without clutter: navigate each oven's recipe bank separately, set temperatures and times, and let the Sapiens Boosted generation's fast recovery keep you moving through service. Convection speed on the lower oven handles high-volume roasting; steam on the upper oven reheats or finishes without drying. The stacked design saves floorspace compared to two side-by-side ovens while delivering the same versatility. At 270 kg and 2040 × 1030 × 980 mm, it's a tall, compact footprint that fits urban kitchens and retrofits where space is tight.

Whether you're running hotels where multiple kitchens need simultaneous service, banqueting operations juggling mains and accompaniments, schools batch-cooking proteins and vegetables for hundreds daily, or contract catering teams where menu complexity demands flexibility, this oven transforms your plating line. Two chambers mean no queuing for mode switches, no batch delays, no compromise on finish quality.

BEFORE YOU BUY

Questions, answered straight

A. Yes—each chamber operates independently. Top chamber can steam while the bottom convection-roasts. Each has its own touch-screen controls, temperature probe, and recipe bank. This is the core advantage of stacking: you don't sacrifice versatility, you amplify it by running two programmes in parallel.

A. Yes, you can run just the lower oven with the upper off, but that's underutilizing the oven. Most kitchens that buy stacked units are running high volume; running both chambers is almost always more efficient than running one larger oven twice.

A. Depends on portion size, density, and whether you're stacking batches. One full load (6 pans upper + 10 pans lower) is roughly 60–80 kg of food. At 100–150 g per cover (standard restaurant portions), that's 400–800 covers per batch. If you reload and cycle again immediately, you're serving 1,000+ covers per service hour. Real throughput depends on your prep and plating speed.

A. The lower oven typically. It has more tray capacity (10 pans) and better air circulation across a larger load. Use the lower chamber for high-volume items like roasted vegetables or jointed meats, and the upper chamber for smaller batches or items needing gentle finishing (reheated dishes, delicate pastries).

A. You need a commercial extraction hood above it, but the hood doesn't need to be oversized just because it's stacked. Both chambers vent to the same stack/flue. Confirm with your kitchen designer that the hood is rated for the combined steam load, but it's usually standard commercial ductwork that handles this.

A. No—each chamber is independent. If the upper oven needs service, the lower continues running. That's an advantage over a single large oven: partial failure doesn't shut down your whole cooking line. Service calls (annual descale, seal checks) are simpler because you're accessing two smaller ovens, not one monolithic cavity.
