Why this bains marie earns its place
The Victor Synergy DHBD3 Heated Bain Marie is built for kitchens that need to hold small-batch hot food on display without space for a full counter suite. Its 150mm-deep wells are sized for dressings, sauces, and individual side dishes rather than bulk items—ideal for à la carte service, plated finishing, and quick holds between prep and plate.
The unit uses two separate heating strategies: an energy regulator-controlled water well beneath each pan keeps the base at consistent temperature, while dimmer-controlled quartz halogen lamps overhead provide direct radiant heat. This combination means you can run them independently—keep the water at a gentle simmer while dialling back the overhead heat for delicate items, or use both in tandem for fast warm-through and display.
Built entirely in stainless steel with a compact 540mm width, it fits tight alongside other counter equipment without overheating the surrounding area. At 660mm depth, it's a genuine countertop unit—not freestanding—that slides into an existing hot counter run. The 2-year parts and labour warranty covers the water system and electrical controls.
