THE WORKING VIEW

Why this bains marie earns its place

The Lincat Silverlink 600 BM7XC is engineered for the kitchen that manages multiple components in parallel. Six 1/3 gastronorm wells means six different holds ready at the pass: sauce one, sauce two, garnish, vegetables, plates, proteins — whatever the service rhythm requires. Instead of rotating one pan repeatedly, you load each well with what you need and they all sit at service temperature in the wet-well heat, no pan swaps mid-rush.

The 1/3 GN size is the modern pass standard — smaller than a full GN pan but large enough to hold useful quantities of sauce, veg or finished components. With six of them, you're essentially running multiple single-well stations in one unit. The stainless steel construction sits tight against the line; at 750 mm wide and 290 mm tall, it's an active pass piece that doesn't dominate the workspace. The front-mounted drain top clears spills instantly, because with six pans, service gets busy and you need to reset fast.

This is for kitchens running composite dishes — each element held separate at temperature, assembled as you plate. Modern gastropubs, event catering, restaurants with complex plates. The 2-year parts and labour warranty covers the heating and the drain mechanism through actual service.

BEFORE YOU BUY

Questions, answered straight

Flexibility. You're not locked into two items; you can hold six different components at temperature and combine them as you plate. Better throughput, less Pan shuffling, and each component stays at its own ideal temperature — sauce doesn't cool while you're waiting for a plate.

Each 1/3 GN pan holds roughly 7 litres at full capacity. So six pans is substantial — enough for most service styles. If you're doing individual plating with small components, six wells let you stage for 60+ covers without burnout. That said, the answer depends on your dish composition; contact Craven Cooling on 01792 732702 if you want to talk through your specific service.

1/3 GN pans are 325 × 176 mm — a third of a full 1/1 GN by capacity. They're the modern standard for component holding because they're easier to work with at the pass and don't waste space. All six fit in the well simultaneously, arranged side by side.

No. All six wells share a single heating element and thermostat, so they all sit at the same temperature. That's actually ideal for a pass — everything at service temp, no cold spots, one dial to manage.

Run what you need. Empty wells don't hurt anything; the heat circulates through them whether they're loaded or not. You only pay for what you use in terms of power draw, and unused wells won't add time to your heat-up cycle.

Annual inspection is standard for any commercial heating equipment — thermostats and heaters work better when checked yearly. The 2-year warranty covers parts and labour for faults, but regular maintenance extends life significantly. For a service engineer, contact Craven Cooling on 01792 732702.
