Why this bains marie earns its place
The Cossiga Linear Series drop-in bain marie is built for service lines where timing matters. With space for five full-size gastronorm pans (1/1 GN), it lets you keep baked beans, gravies, chilli, hot desserts or pre-cooked proteins at a steady +75 to +85 °C—the sweet spot between hot-hold and deterioration. The thermostat control is simple and reliable: set it and forget it.
What sets this model apart is the presentation layer. Overhead halogen gantry lighting catches the food from above, making it look fresh and appetising on the pass. The square glass front door and acrylic rear give diners a clear view of what's available, and staff quick access to lift pans without fumbling. For kitchens running both self-service buffet and assisted-service passes, it's genuinely versatile.
The wet well housing is 304 stainless steel—commercial-grade, easy to hose down. You can run it wet or dry depending on your menu: wet for pans sitting in hot water, dry if you're holding in enclosed containers. It's a single-phase electric unit rated at 220–240 V, so it fits into standard kitchen circuits. At 1825 mm wide and 690 mm deep, it drops into most under-counter spaces. The 2-year warranty covers both parts and labour.
