Why this meat ager earns its place
This is a dedicated dry-ageing display fridge rather than a general storage cabinet, built with a glass door so ageing product is visible to customers while the cabinet itself controls the environment ageing needs. It's the format butchers and restaurants use when ageing is part of the sell, not just back-of-house storage.
Nominal capacity is 620 litres, with 467 litres of usable capacity across four 2/1 GN perforated stainless steel shelves rated to a maximum of 20kg each. It holds +1°C to +6°C with humidity maintained between 60-90% — the band controlled dry-ageing needs rather than standard chilled storage. Cooling is by air, on R290 refrigerant, drawing 262W from a 230V supply, and it weighs 150kg.
Build includes perforated shelving on anti-tilt tray slides for airflow around the meat, full-height internal LED strip lighting to display the product without adding heat, and Himalayan salt blocks fitted to help manage moisture and improve flavour during ageing. Insulation is 80mm polyurethane foam with low GWP and zero ODP, finished with a full-length stainless steel door handle and a self-closing, barrel-locked glass door with a magnetic balloon gasket for a complete seal.
