It is a storage fridge for back-of-house, not a display or presentation unit.
Day to day it runs as a self-contained chilled cabinet with automatic defrost and a digital controller keeping temperature steady. The single door limits cold loss each time it is opened on a busy line, and the stainless steel 430 interior and exterior wipe down between shifts as part of a normal cleaning routine — the material resists corrosion in a wet kitchen. At 38 kg, it is light enough to reposition if the layout changes.
For install, the under-counter format is designed to slot into a bench run running from a standard 230 V supply at 11 kW.
