Why this multitemp earns its place

A three-door counter is bought to end the walking. Stock sits at counter height directly under the section that uses it, so a chef reaching for the next tray does not break position, cross the kitchen and open a store-room cabinet that then has to pull its temperature back down. Williams builds the VJC3 as a complete solution for storing different food types, and across three door sections that is how it gets worked in practice — proteins under one, dairy and garnish under another, whatever the section runs through hardest nearest the hands that need it.

MultiTemp is what keeps that arrangement useful for the life of the counter. The operating temperature is a setting, not something welded in at the factory, so a counter running chilled service stock this season can be turned over to frozen duty when the menu or the trade changes, rather than being replaced. Three separate doors also mean the cold stays where it belongs: one section opening its own door is not venting the whole counter into a hot kitchen, which is the difference between a counter that holds temperature through a Saturday night and one that spends the evening catching up.

The body is stainless steel in a silver finish, which is what a counter needs when it sits in the line and takes pan bases, trolley wheels, splashes and a wipe-down after every service. Inside, the aluminium lining conducts fast and cleans down without holding odour when the duty changes, so it recovers temperature quickly after the doors have been in and out all through a rush.

The operating temperature is set rather than fixed, so the same counter can be run as chilled storage or as frozen storage. It follows what the section needs instead of locking you into one duty.

Separate doors keep the cold in. One section opening its own door does not vent the whole counter, so the unit holds temperature far better through a service where it is being opened constantly.

Clear air to the condenser and distance from the heat of the range. A counter built tight into a run beside fryers will work harder than one with breathing space, and that shows up on the electricity bill as well as in the temperature log.
