Why this container earns its place
Seventy-two litres is a bulk vessel rather than a tub. It is the size you decant a delivery into, so a section works from one container of flour, sugar, rice or dry mix instead of four part-used sacks propped against a store room wall. That single move tidies a store, makes the level visible at a glance, and gives the ingredient one date and one place to live. The mobile format is the other half of it: at this volume the container is meant to travel to the bench, the store or the wash-up, not be lifted across a kitchen by whoever is nearest.
Polyethylene is the material this job settles on because it takes what a store room hands out. It does not dent like metal, it does not corrode in a damp store or a cold room, and it comes clean with a wipe rather than a scour. White is the right way round for a container holding open food — soiling shows, so you can see whether it has been cleaned since the last ingredient came out of it rather than taking it on trust. Before ordering, measure the spot it will live in and the route it has to travel; a footprint that clears a doorway empty can be an awkward turn once it is loaded.
