Why this infrared earns its place
Non-contact is what makes it fast. A reading takes a second, nothing goes into the food, and there is nothing to sanitise before the next one — so the checks that normally get skipped because they are a nuisance become checks that actually happen. A pallet of frozen goods can be sampled on the bay while the driver waits, a hot-hold counter can be swept mid-service without opening anything up, and a griddle can be read before the first order goes on. The -50 °C to 530 °C span is what lets one tool do all three: frozen deliveries at one end, cooking surfaces at the other.
What it will not do is read a core, and that is not a shortcoming so much as a division of labour. Infrared measures a surface, so it is the screening instrument that tells you which box, which pan or which tray needs a probe reading before anything is signed off. Use it accordingly: aim at the food or the surface itself rather than through film, packaging or a plume of steam, and stand close enough that you are reading the item and not the tray around it. Keep it where the checks are made — goods-in, the pass, the range — because a thermometer stored somewhere else is a check that quietly stops happening.
