Why this knive earns its place

A bread knife works by sawing, not by pressing. The toothed edge bites into a hard crust and pulls through it while the crumb underneath stays where it is, which is why a loaf cut with one looks like slices rather than compressed wedges. Blade length is what decides whether that happens in one movement: at 12in the blade is longer than most loaves, so a slice is a single draw from crust to board with no second entry cut and no ragged line down the side.
