THE WORKING VIEW

Why this pastry knive earns its place

The Wüsthof Gourmet Confectioner's Knife is the specialist tool for pastry work. At 392mm, this extended blade gives you reach and control for slicing cakes, pastries, and delicate baked goods with the precision that presentation demands. The stainless steel blade is precision laser-cut from a single plate and refined through 35 manufacturing stages, creating an edge sharp enough to slice through fondant and génoise without dragging or crumbling the crumb.

What makes this knife essential for pastry is its unique balance. The slightly longer profile and careful weight distribution mean you can use gravity and momentum rather than force, producing cleaner cuts with less pressure. This is especially important when working with layered cakes or delicate patisserie—one clean stroke beats ten rough ones. The low weight and ergonomic handle mean your hand and wrist won't tire during long plating sessions or batch cutting.

The blade is stainless steel, not high-carbon, which means it's more forgiving in a busy pastry environment. It resists staining and discoloration from acidic fillings, chocolate, and fruit. Like the rest of the Gourmet range, it's fully dishwasher safe, so cleanup between tasks takes seconds rather than minutes—critical when you're working to tight plating schedules.

BEFORE YOU BUY

Questions, answered straight

Stainless steel is more resistant to discoloration from acidic fillings, fruit compotes, and chocolate—common in pastry work. It's also slightly more forgiving if the blade comes into contact with fillings or mousse during slicing, which is inevitable in a pastry kitchen.

The overall knife is 392mm long, with a 26cm working blade. This extended length gives you the reach and control needed for slicing full-size cakes and tall pastries in a single, clean stroke.

While it can handle other cutting tasks, it's optimised for pastry work. The extended length and light weight are less practical for heavy vegetable prep or butchery; for those tasks, a traditional chef knife is more appropriate.

Yes. The triple-riveted black plastic handle and stainless steel blade are fully dishwasher safe, making it ideal for busy kitchens where hand-washing time is limited.

The precision laser cutting and 35-stage manufacturing process create an incredibly consistent edge. Stainless steel holds its edge well for pastry work; with regular honing between shifts, this knife will maintain its cutting performance through high-volume plating.

No. The blade is precision-cut from a single steel plate and reinforced by the triple-riveted handle. The construction is rigid but lightweight, providing the control and feedback you need for clean, confident cuts.
