Why this chefs knive earns its place

A good chef's knife earns its place in your hand through every shift. The Mac Gyuto MBK-85 is exactly that: 22cm of stamped stainless steel, sharp enough to slice a tomato skin-first without crushing it, robust enough to chop through a carrot or an onion day after day.

The 22cm length is the workhorse size. Long enough to handle whole vegetables and joints of meat in three or four strokes, short enough that you don't tire swinging it over an 8-hour service. At 552g, it has real weight — that weight does the work, not your arm. The blade moves forward and down in one motion, letting you work with rhythm and speed.

This is Japanese craftsmanship made simple. Mac builds these in Japan with skilled craftsmen involved throughout the process. The ultra-comfortable handle is designed for hours of work, not a single Instagram moment. Use it properly and it'll outlast your career. Hand wash only, hone it before and after heavy service, sharpen it a few times a year. That's all it needs.

Questions, answered straight

22cm is the industry standard for a chef's knife — it's the sweet spot between reach and control. If you're 5'8" or taller with proportional hands, 22cm is your blade. If you're smaller or prefer more control, it might feel slightly long; if you're larger or work with bigger boards, a 25cm (see the MBK-95) might suit you better. Most cooks end up with 22cm.

Gyuto is the Japanese term for a chef's knife — a general-purpose knife for all kitchen work. It's the equivalent of a Western chef's knife, but Mac's Gyuto carries Japanese design and craftsmanship. You'll find them in professional kitchens worldwide.

It handles both. The 22cm blade and 552g weight mean it can break down a chicken or chop through a large carrot, but it's genuinely good at fine work too — brunoise, julienne, chiffonade. It's the definition of all-purpose.

Hone it with a steel before and after heavy service — that takes 30 seconds and keeps the edge aligned. Sharpen it 2–3 times a year depending on volume and cutting surface. Stamped stainless steel doesn't hold an edge quite as long as forged carbon steel, but it's easier to maintain and less prone to rust.

Dishwashers dull stamped blades fast and can crack them. Wash under warm water immediately after use and dry at once. It's 2 minutes of habit that keeps the knife true. Never leave it wet or soak it — stainless steel can still pit or discolour if you don't treat it right.

If the blade cracks, chips, or the handle fails in normal use, Mac will replace it. Call Craven Cooling on 01792 732702 to arrange it. That's your safety net — but if you look after this knife, you won't need it.
