This Wüsthof Gourmet carving set combines two purpose-built tools for one job: presenting meat at the pass or table with clean, confident cuts. The carving knife has the length and blade geometry needed to slice through roasts, joints and poultry in long, even strokes. Both pieces are built to Wüsthof's standard: forged from high-quality German stainless steel and hardened to 56 Rockwell through a 34-step manufacturing process. That hardness means the knife's edge stays sharp through repeated slicing. The full tang running through each handle delivers the balance and stability you need when working with larger pieces of meat under service pressure.
The handles are moulded from POM, a dense engineering plastic engineered to resist bacterial growth, discolouration and the physical wear of daily commercial kitchen use. Compact at 280 grams total, this set stores easily and travels well if you need to move it between stations.
