Why this carving knive earns its place
The Vogue Tsuki Series 8 Carving Knife is the all-purpose workhorse of the kitchen knife drawer: long enough to slice a whole roasted chicken in two or three strokes, yet precise enough for vegetable brunoise and delicate plating work. Its 20.3 cm blade is a genuine do-everything tool for restaurants, hotels, and busy prep kitchens.
Carving knives live between the chef's knife and the specialist blades. This one, built from Japanese forged stainless steel, holds an edge through hundreds of cuts and works equally well on cooked meat, raw protein, and vegetables. The flat blade geometry gives you full control when you need it—for slicing the breast off a roasted bird, portioning a tenderloin, or building a plate. The long length also means fewer strokes and faster work.
At 330.5 mm overall and just 180 grams, it's light enough for precision work and balanced enough to do high-volume slicing without fatigue. The metal handle sits comfortable in the hand through a full service shift.
