Why this carving knive earns its place

Sometimes you don't need the full 25cm blade. Victorinox's 22cm carving knife brings the same Swiss precision and serrated edge in a lighter, more nimble package. At 350mm overall and just 150g, it sits comfortably in your hand for extended carving without fatigue. The shorter blade still produces clean slices through roasted meat, but it's easier to control in tighter spaces — behind a carvery counter, in a bustling kitchen, or when you're plating one portion at a time rather than serving a whole table.

The serrated edge does what it's supposed to: grips the surface of cooked meat and cuts without crushing the fibres. The carbon stainless steel blade takes a sharp edge and holds it, while resisting rust and staining. Victorinox has been making knives since 1884, and this blade carries that experience in its geometry and heat-treatment. The black Fibrox handle offers that same non-slip grip — essential when the blade is sharp and your hands are anything but dry.

The lighter weight and shorter blade make this the smarter choice for specific jobs: carving poultry (where a smaller blade gives you better control through joints), plating individual portions, or working in compact stations. Yes. The reduced weight (150g vs around 210g for the 25cm) makes a difference over hours of carving. The shorter blade is easier to manoeuvre around poultry joints and in tight spaces. If you're carving large prime roasts all service, the 25cm is better. For poultry and portions, the 22cm is more efficient.

You can, but it requires more strokes — each stroke covers less meat. For high-volume carvery service with entire joints, the 25cm is the better tool. The 22cm excels at medium roasts, poultry and portioning.

Hone it weekly with a steel to keep the teeth aligned. True sharpening (restoring the edge) depends on use — typically monthly to quarterly in a professional kitchen. A dull serrated blade is worse than a dull smooth blade; you'll shred rather than slice.
