THE WORKING VIEW

Why this chefs knive earns its place

The 22cm Fibrox carving knife sits at the sweet spot between the shorter utility blades and the full-length carving knives. Over 100 years of Victorinox manufacturing expertise means this blade arrives razor-sharp and stays that way through weeks of professional use. The carbon stainless steel construction delivers the edge retention of a carbon blade with the corrosion resistance chefs need in high-moisture environments.

Stamped construction—not forged—keeps this knife lighter in hand whilst maintaining absolute blade rigidity. The edge is responsive to your cutting technique, slicing cleanly through cooked and raw proteins, and the blade geometry naturally guides the knife through its stroke without binding or dragging. This 350mm overall length is the workhorse size: large enough for roasts and portioning work, compact enough for plate-up tasks and detail work.

The handle is moulded Fibrox nylon, designed specifically for commercial kitchens where blades survive dishwasher cycles and wet-environment work. Non-porous construction sheds bacteria and won't absorb water, supporting food safety compliance. It grips securely even in wet conditions, and the ergonomic profile sits comfortably during the repetitive cuts that define kitchen work.

BEFORE YOU BUY

Questions, answered straight

Yes, this is an ideal carving knife size. The 350mm blade is long enough to slice cleanly through larger proteins without a second stroke, and the length gives you control over the cut angle without your knuckles hitting the meat. It carves whole chickens, loins, and roasts with equal ease.

Stamped blades are cut from sheet steel and sharpened; forged blades are shaped by heat. Stamped blades are lighter, sharpen more easily, and suit high-volume kitchen use. They do chip if struck sideways or dropped on concrete, whereas forged blades bend instead—trade-off between edge sharpness and damage tolerance. In a well-run kitchen where blades aren't dropped, stamped is the professional choice.

Either. Dishwasher safe means it won't be damaged by industrial washing. Hand-washing in warm soapy water and air-drying will preserve the edge longer—chemical-free and no high-heat cycles mean less stress on the blade temper. Many chefs hand-wash high-use knives and machine-wash others. Do what fits your operation.

Probably honing. Daily honing (using a steel to realign the edge) restores about 80% of sharpness and takes seconds. Sharpening (using a stone or professional sharpener to restore the actual edge) is needed every 2–4 weeks depending on volume. Hone daily, sharpen as needed—the blade will perform at its peak.

No to both. Fibrox is a non-porous, thermoplastic nylon engineered for commercial food service. It won't absorb water or odours, and bacteria don't colonise it the way they do wooden handles. It's tougher than it looks—commercial dishwashers won't crack it, and it handles the thermal shock of hot and cold wash cycles.

Less than pure carbon steel, more than high-carbon stainless. Don't leave it wet for hours (it will spot), and dry it after washing. Normal kitchen storage (knife rack, sheath, or block) is fine. Avoid leaving it soaking, and don't store it touching other wet blades. Clean, dry storage keeps it pristine.
