Why this fillet knive earns its place
The filleting knife is all about flex. While a boning knife is stiff and tapers to a point, this blade is thin, has controlled flex built in, and curves gently—the geometry lets you follow the natural architecture of a fish fillet without hacking through meat or leaving flesh on the bone. Twenty centimetres gives you reach across a whole fish or large fillet; the laser-cut geometry means that flex is consistent and controllable, not wavering or unpredictable.
Wüsthof's manufacturing philosophy shows here. High carbon steel is harder than softer blade materials, which means it holds an edge through dozens of fillets without dulling. The laser-cutting process creates a blade with no forging irregularities, so the flex is uniform along the length—you're not fighting a stiffer spot halfway down. The 35-stage manufacturing pipeline ensures consistent heat treatment and edge geometry. The black plastic handle is triple-riveted and dishwasher safe, gripped safely even when wet or slippery.
The flexible blade is the specialist's choice for fish and delicate proteins. You push the spine against the skeleton, let the tip follow the natural line of the fillet, and the blade does the rest. In skilled hands, waste drops dramatically—you're separating meat, not hacking. For seafood operations, fine dining that works whole fish, or any kitchen with a serious fish program, this blade is non-negotiable.
