Why this product earns its place

A boning knife lives in the hand of a butcher or fishmonger for hours at a time, so balance and edge are everything. The Global G21 combines Molybdenum-Vanadium stainless steel — harder and more wear-resistant than standard stainless — with forged construction that creates a blade spine in perfect balance with the handle. The result is a knife that doesn't tire the hand.

At 290mm in total length with a slender 11mm blade width, it's designed for surgical precision. You work it through tight spaces: between ribs, along the natural seams of meat, through fish backbone and flesh. The sharp edge cuts cleanly without crushing, which matters for meat quality and food safety. Japanese knife-making discipline runs through this design; Global's craftsmen hand-forge each blade to ensure consistency.

This is a butcher's tool, not a kitchen utility knife. If you're breaking down carcasses, filleting fish, or preparing meat professionally, the G21 is engineered for that work. It earns its keep.

Questions, answered straight

A boning knife is shorter, slimmer, and more flexible — it's built to curve and work into tight spaces around bone and sinew. A chef's knife is broader, heavier, and designed for chopping. They're not interchangeable.

Very sharp. Global knives are shipped with a professional edge; it's ready to work immediately. Hone it regularly with a steel to maintain the edge between sharpenings.

The G21 is optimized for a 15–20° edge. Most Japanese knives sit toward 15°, which gives you a finer edge but requires more care in the kitchen. Ask your sharpening service to use 15° if you want to preserve the original factory edge.

Technically yes, but we don't recommend it. Hand-wash and dry immediately to preserve the edge and prevent corrosion. Dishwashers dull blades and can cause handle damage over time.

Molybdenum-Vanadium steel holds an edge very well, so you'll hone far more often than sharpen. Use a sharpening steel (like the Global G38) 2–3 times per week. For full sharpening, we recommend a professional service or a whetstone if you're skilled; take it to your sharpening supplier every 3–6 months depending on volume.
