Why this pizza trays & accessorie earns its place
This is the unsung workhorse of fast-moving pizza operations. At 300 mm × 360 mm, it's sized perfectly for a single pizza in a conveyor oven or for the tight chambers of a small wood-fired deck. The rectangular shape maximises the usable surface without adding bulk, so you're loading in one smooth motion without fumbling at the edges.
Aluminium is the practical choice here. It's light enough that you can work all service without fatigue — critical when you're loading 200+ pizzas in an evening. It conducts heat away from your hands faster than wood or steel, and it'll never rust or rot. The flat blade gives you excellent control; you can slide it under a dough ball with precision, angle it to load a partially-baked pizza for the second pass, or use it to rotate a pie mid-bake if your oven doesn't have a rotating function.
The 360 mm depth is a deliberate engineering choice. It's long enough to reach into small oven chambers and extract pizzas from the back without scraping the sides, but short enough to manoeuvre in a compact kitchen. Combisteel has built these for decades — they know exactly what pizza operators need.
