Why this terrine mould earns its place
The Vogue cast iron terrine mould is a solid 1.3 litre pan built in black cast iron, with an external size of 310 mm long, 100 mm deep and 90 mm high. At 3.1 kg gross weight, it has the heft you expect from cast iron cookware.
Cast iron is valued for even heat distribution, and the cream enamelled interior gives the mould a cleaner cooking surface. When properly seasoned, the pan is intended to provide a long-life non-stick finish and help protect it from rust.
That heat-retaining build matters in service as much as it does in the oven. The manufacturer states that cast iron keeps hot food hotter for longer, which is useful when you want a dish to stay presentable after it comes out.
