Why this mould earns its place
These mini pie moulds are the plain 100 mm format from Matfer Bourgeat, supplied in a 12-pack for repeat production. Each one is 100 mm in diameter and 30 mm high, so you get a compact, individual-sized mould with a defined shape.
The Exoglass material is the important part of the spec. The manufacturer describes it as a new generation of mould material made from a composite, and it is usable from -20 to +250 degrees C. That makes the moulds useful across a wide range of kitchen temperatures without changing the basic format.
At just 0.04 kg gross for the pack, this is a light set of moulds that is easy to handle, store and rotate through production. For kitchens that want a simple plain finish rather than a fluted edge, the cleaner shape keeps the presentation focused on the filling.
