Why this accessory earns its place
Marking pattern matters on the plate. A cross-hatch grill draws small squares of colour — read as intentional and precise. Parallel lines sit between ordered and organic, depending on how you angle the item. One grate reversed gives you both, so you're not storing two tools or choosing at the start of service which plate style you'll commit to.
The 1/2 format is right-sized for plated prep: a fillet of fish, a selection of grilled vegetables for a composed plate, a trio of asparagus spears. Heat circulates under the grate, so items don't steam. Stainless steel is stiff and won't bow under load, and it resists discolouration from salt and vinegar — important when vegetables are marinated before grilling. A 1/2 grate fits into standard prep stations and doesn't hog oven space; you can run four side-by-side if you're prepping for a large sitting.
