THE WORKING VIEW

Why this drainer plate earns its place

A 1/1 gastronorm drainer plate occupies the full width of a bain marie or prep counter. Clear polypropylene lets you inspect contents without removing lids — critical when items are stacked or stored between prep stages. The perforated base drains water efficiently without pooling, so items can rest and drain in a cold cabinet without becoming waterlogged.

Polypropylene is lightweight enough to handle daily, durable enough to survive commercial dishwashing and high-pressure spray, and does not absorb water or food odours. The transparency fades gradually over months of use in a busy kitchen, which is normal wear. Visibility remains good as long as the surface is clean, making cross-contamination inspection quick and reliable.

A 1/1 drainer is your choice for high-volume prep operations where you want to drain a day's entire batch of salads, herbs, or vegetables in one place without rotating stock. The full width maximises usable surface area and minimises the restocking trips needed during service.

BEFORE YOU BUY

Questions, answered straight

The 1/1 fits only a full-width gastronorm aperture — it will not fit a 1/2 or 1/3 space. Check your bain marie or prep counter for the gastronorm marking — it should state "1/1" on the frame or manufacturer's badge.

Light to medium loads — prepped vegetables or salads up to 4–5 kg — sit safely without sagging. Do not stack heavy cooked items; polypropylene flexes under sustained weight and the perforations will wear prematurely.

Very fine herbs or microgreens can catch in the perforations momentarily, but they drain through within seconds. If you store extremely fine items, pair the drainer with a shallow tray or basket on top.

In a high-volume kitchen, expect 18–24 months of regular daily use before the plate clouds over or perforations show wear. It is a consumable, not a long-term capital item.

Yes. 1/1 lids sit flat on the drainer plate rim and provide a reasonable seal for short-term cold storage. Do not stack multiple drained plates on top of each other — weight compresses the perforations.

No. Polypropylene is not magnetic and will not work on induction surfaces. It is designed for passive prep and cold storage only.
