Why this pan lid earns its place
This pot sits right between the workhorse and the detail work. At 6.3 litres, it's big enough for genuine batch cooking — a large pot of sauce, a restaurant-sized portion of stock, a day's worth of braise prep — but small enough to move, to heat quickly, and to fit on a pass or in a busy prep area without dominating the space.
The 200 mm (8-inch) base is a sweet spot: wide enough for even heat distribution across the bottom, tall enough to prevent splashing during a rolling simmer, stable on any hob without wobble. It's made from the same food-grade stainless steel (JYH21CT) as heavier stockpots, so it'll age better than aluminium and withstand the high-temperature work and repeated, hard washing that commercial kitchens dish out.
Like its larger sibling, it works on gas, electric, ceramic, halogen and induction hobs. The lid seals loosely for braising and reduction, tightly enough to hold heat through a long simmer. A 2.5 kg empty weight means it's manoeuvrable but substantial — you can trust it on the hob without babysitting. Dishwasher-safe, so clean-up is simple.
