THE WORKING VIEW

Why this plate earns its place

Twenty-seven centimetres is the standard dinner plate size—wide enough for a full course, small enough to stack tight and move fast. Vitrified fine china is the material that outlasts the kitchen: it doesn't chip on the rim when you're loading plates three per hand under pressure, doesn't craze from thermal shock when you go from a 65°C pass to an ice water rinse, and doesn't absorb sauce or red wine stains. The weight sits right: plates feel substantial in hand without being unwieldy, and they stack reliably into your pass racks without slipping or tilting.

The rimmed edge gives you an edge for service—food stays on the working surface, the rim provides a frame, and the white background lets plating speak. Embossed wave detail runs the rim, consistent with the rest of the Crème Rousseau range. If you're running mixed sizes at table—27 cm mains, smaller bowls for sides—they read as one service because they share the finish and detail.

BEFORE YOU BUY

Questions, answered straight

A 27 cm plate is the standard dinner size and takes a full main course with vegetable and sauce. A 23 cm works for smaller courses, appetisers, or when you're running tight on table space.

Budget three plates per cover: one for the mains, one in the dirty pile, one in the wash. For 120 covers and a 30-minute dishwash cycle, you need about 360 plates—or two full racks.

Yes. Standard racks accept dinner plates. Stack 12–18 plates per pegs (check your load limit). Load carefully to avoid plate-on-plate contact, which can cause chipping at the rim.

No—it's less prone to chipping. Vitrified is fired harder and denser. The rim is stronger and more resilient to the knock-and-stack discipline of service.

Staining is surface-level on vitrified china glaze. Coffee and red wine wipe clean immediately; no permanent marks even after years of daily use.

Yes. The whole range shares the same finish, material, and embossed detail, so you can mix plate sizes, bowls, and serving pieces at one table and they read as one service.
