Why this plate earns its place
The 19 cm plate is the workhorse size for starter courses—large enough to present a composed starter without crowding, small enough to clear quickly and reset for mains. Melamine is the dominant choice in commercial kitchens for this size because ceramics chip at the rim (where hands grip plates during service) and cost significantly more to replace. A sea-toned melamine plate sits at the intersection of durability and visual refinement—practical and neutral enough to suit most plating styles.
Melamine plates survive the passthrough dishwasher at 70–80 °C without degradation and handle the pace of high-turnover service without the fragility that makes ceramic plate replacement a constant operational cost. The sea glaze offers a sophisticated neutral that reads clearly at normal viewing distances and doesn't over-warm or over-cool the appearance of plated food the way pure white or cream finishes can.
