Insert a calibrated probe into the deepest point of the tray, not the glistening top. A lamp can show 70°C on the surface while the middle of a deep tray sits at 55°C. The core reading is the legal one.
Deep trays of sides, sauces and gravy need conductive/convective heat holding them at 63°C from below. Lamps cannot do this. Put every deep tray over a heat source, and use the lamp only to finish the carving and plating zone.
If food drops below 63°C, the clock starts. It can be held below 63°C for a limited single period before it must be served or discarded — check current FSA guidance for the exact allowance. There is no resetting the clock by reheating under a lamp.
