What blender power do I need for smooth soups?

A motor of around 0.8-1.2kW with a variable speed dial handles most soup and sauce blending; higher-fibre vegetables or larger batches benefit from the top end of that range to avoid a grainy finish.

Jug blender or stick blender for a pub kitchen?

A stick blender is quicker for blending soup directly in the pan and easier to clean, while a jug blender gives a smoother, more consistent result for sauces and purees — many pub kitchens use both depending on the dish.
