Gastronorm pan lids are chosen on three points: fraction (to match the pan footprint), lid type and material. Because the GN system is fixed to EN 631, a lid marked for a given fraction — 1/1 at 530 × 325mm down to 1/9, up to the 650 × 530mm 2/1 — fits any compliant pan of that fraction regardless of brand or pan depth. Solid lids give full coverage for fridge storage, stacking and transport; notched lids have a cut-out so a ladle or spoon can stay in the pan during service. Stainless steel 18/8 suits hot holding, oven-side use and heavier daily wear, while polycarbonate is lighter and see-through for cold storage and quick stock checks but is generally not oven-safe. Match the lid to the pan fraction exactly — a near-miss such as 1/9 versus 1/6 will not seal. Look for a rim that seats flush without rocking and stacks flat.
