The key buying consideration across the department is matching material and durability to service style: vitrified porcelain or stoneware crockery and toughened glassware for high-turnover hospitality, 18/10 stainless or non-stick cookware for kitchen prep, and EN 631-standard Gastronorm for compatibility with bain maries, ovens and fridges. “Catering tableware,” “commercial kitchenware” and “hospitality supplies” are common umbrella buyer terms.

The department is organised into seven areas. Crockery and glassware cover front-of-house serving — vitrified porcelain and toughened or fully tempered glass built for repeated commercial dishwasher cycles. Pots, pans and Gastronorm handle the kitchen: heavy-gauge aluminium and stainless cookware for the hob and oven, and EN 631 Gastronorm (from 1/9 up to 2/1, in 20 to 200mm depths) that drops straight into bain maries, ovens, prep counters and fridges. Commercial ranges are rated for repeated commercial dishwasher cycles, stacking under daily handling and (for cookware) sustained hob/oven use — consumer equivalents are usually thinner-walled and not warrantied for that level of use.
