A rise-and-fall element means you dial precisely how close the radiant heat sits to your plate or dish, rather than accepting a fixed grill-to-element distance. The touchscreen panel responds directly to touch—no traditional buttons or dials. The Hi Touch runs three distinct operating modes. Cook mode uses a timer: you select heat and duration, put your plate in, and the grill runs to completion. Hold mode maintains temperatures between 40 and 70°C across eight different settings—perfect for keeping finished plates at service temperature without further cooking or drying. Programme mode (P1, P2, P3) combines both: cook according to your saved recipe, then hold at a set temperature. Recipes stored in memory mean consistency across shifts and across staff: your prep kitchen finishes plates the same way every single time.
Three-phase electric power feeds the element directly, delivering responsive heat that builds instantly. At 735 mm wide, the ST40 covers serious pass width without dominating counter space. The 80.5 kg weight is substantial but manageable—installation is straightforward on a standard pass or prep counter.
