The Blue Seal Evolution convection range is built for kitchens that cook for crowds. The 2/1 Gastronorm gas oven circulates heat with a fan, which means faster, more even cooking than static ovens — and that directly translates to higher covers per service. You get a wider temperature range (50°C right down to 320°C) because convection works harder; chicken roasts faster, pastry colours evenly, and holding becomes active, not passive. The oven capacity is 5.3 cubic feet, and with proper racking, you can batch more covers through it per hour than you'd think.
The gas hob is separate from the oven, which gives you the flexibility to work on both at once — roasting a main while the braise is on the heat. The oven burners have piezo ignition (they light reliably, every time) and the hob burners are fitted with flame failure protection, so you don't have to babysit them. The whole unit is built from a heavy-duty, high-quality chassis that can withstand the rigours of a working kitchen, and because it's fully modular, you can expand or adjust your cooking suite without the whole thing falling apart.
