Why this bakery oven earns its place
The Mono Artisan mini deck oven bridges a real gap in the market. It's built by bakers for bakers—people who care about crust quality and steam delivery but don't have the space or electrical setup for a full-size professional oven. At just 971 mm tall, 719 mm wide, and 642 mm deep, it sits on a countertop or small bakery corner, yet delivers the results that define artisan bread.
The engineering is purposeful. Four heating elements distribute heat evenly across the chamber; three baking stones provide the thermal mass needed for bottom-crust development. Crucially, it handles steam properly—two methods let you choose your workflow. Specially designed steam troughs pre-heat inside the oven and accept hand-poured water to generate ambient steam throughout the bake. Alternatively, use the included food-safe pressurised spray gun to inject measured steam as you work, giving you fine control over crust formation. Both methods deliver the moisture that creates shine, bloom, and the structural lift that separates real bread from the ordinary.
Control is simple and mechanical. A door-mounted manual damper lets you manage the oven's draw and residual heat, whilst the control panel is refreshingly straightforward—no algorithm mystery, just clear heating and timing. Powered by a standard 230V single-phase plug, it fits any commercial kitchen without needing an electrician to rewire the building. Made to order and finished in stainless steel, it's a tool built to last and work daily.
