Why this charcoal oven earns its place
British-made since 2008, the Bertha Professional Original is built from 304 stainless steel with a bold red finish that makes a statement on the line. The enclosed chamber design retains heat in the walls and roof, delivering consistent temperature throughout without hot spots. You can hold production at 250–350°C for grilling, or scale down to 150°C for slower techniques — giving you the flexibility to char steaks, cook whole fish, roast vegetables, and work with game, all on the same service.
The red finish stands out on open passes and outdoor installations, turning the oven into a design feature as much as a working tool. Fire-up takes 30–40 minutes, running at about 12–16 kg of charcoal per day with normal service (9 hours). At full pace, you'll hit 90 kg of output per hour. The oven is designed to handle a normal 160–180 covers, so it scales cleanly from small à la carte services to busy banquet work.
What sets this apart is the moisture retention. Charcoal's radiant heat keeps food succulent because the enclosed grill seals in natural juices rather than drying surfaces. Chefs endorse Bertha specifically because the flavour and texture you get from charcoal are genuinely difficult to replicate on a flat-top. One piece of kit opens an entire cooking style to your menu, and this version adds visual theatre.
