Why this freestanding earns its place
Hatco's Rapide Cuisine is a commercial induction hob built for service speed. Two independently powerful zones let you manage sauce temperatures and boil-downs side by side. The feature set is more ambitious than compact units: you can program up to six menu items with three cooking stages each, so soups or stocks that follow a set boil-simmer-hold routine can run on a saved preset. Alternatively, use the food temperature probes to cook to an exact internal temperature rather than guessing timing.
The unit runs from full manual power control (0–100 in single increments) or from a temperature target in either Celsius or Fahrenheit. Timers go up to 10 hours in program mode, which covers overnight stock-building without user input. Heavy stainless steel housing with side impact protection means the unit survives the bump and clang of a busy kitchen. The display is high-resolution colour, so you can see settings and readouts clearly from a distance.
In raw power terms, Hatco rates each burner equivalent to 31,000 BTU per hour gas — a realistic comparison for commercial kitchens deciding whether to switch from gas to induction. Pan Sense Technology means the unit only activates when a pan is actually present, cutting waste on idle heat. Eight surface temperature sensors maintain even heating across the cooking zone.
