THE WORKING VIEW

Why this induction hob earns its place

Induction hobs have earned their place in busy kitchens for one reason: they respond instantly. The Fagor 900 Series 4-zone does exactly that — 5kW of power at each zone means you're heating pans, not the air around them. The ceramic glass top stays cooler than traditional hobs and the lack of naked flames or hot elements removes a significant safety risk on a crowded pass. At 800mm wide, there's room for larger pots and pans without the footprint becoming unwieldy.

The hob's strength is precision and speed. Front-mounted dial controls let you adjust each zone independently, so you can hold a gentle simmer on one side while bringing water to a rolling boil on another. The stainless steel construction is built for the rigours of a professional kitchen — easy to wipe down between services and robust enough to handle years of heavy use. And because induction is inherently more efficient than gas or traditional electric, your energy costs per service stay lower.

At 290mm high and sitting on a countertop, the 900 Series hob slots neatly into existing layouts. The 400V three-phase connection is standard for professional kitchens, and at 85kg, installation is straightforward. This is a tool that does one job — heating food fast and safely — and does it exceptionally well.

BEFORE YOU BUY

Questions, answered straight

Induction heats far faster than gas or traditional electric — the 5kW per zone means you'll see a rapid boil. The exact time depends on the pan and water volume, but induction is your fastest option for high-turnover services.

Much safer than gas hobs. There's no naked flame and no hot element — the hob only heats when ferrous cookware (iron or steel pans) sits on the surface. Remove the pan and the zone cools immediately. The ceramic top itself stays significantly cooler than traditional hobs.

Induction requires ferrous (magnetic) cookware. Most stainless steel and cast iron pans work perfectly. If a magnet sticks to the bottom of your pan, the hob will work with it. Non-magnetic materials like aluminium or copper won't heat directly.

The hob needs 400V three-phase power. At 85kg and 800mm wide, it sits on a stable countertop or can be integrated into existing work surfaces. Installation is straightforward — we recommend working with an electrician familiar with professional kitchen equipment.

The ceramic glass top wipes clean with warm water and a soft cloth. Because nothing burns on or sticks the way it might on a traditional hob, cleaning is quick and simple. Dry it off and you're ready for the next service.
