Each pan holds 12.8 litres of oil, giving a combined capacity of 25.6 litres, and Falcon states a combined output of 34 kg chips per hour. The pans can also be drained independently, so only the oil that has been used needs to be replaced, which keeps maintenance simpler through a busy week.
That twin-pan layout also helps with allergen management. One pan can be devoted entirely to allergen-free food such as gluten free while the other handles the rest of service, so the fryer supports clearer kitchen control without losing output. It works across a 140-190°C temperature range and has a fast-acting safety thermostat that switches the unit off if the oil gets too hot.
