The 25kW input still drives thermal recovery: temperature bounces back steadily, not fast as a smaller tank, but fast enough for continuous work.
Propane supply is flexible. No mains-gas infrastructure needed—run it off bottled supply and you're kit-agnostic: festivals, roadside setups, mobile catering, venues that haven't yet got gas connections built. You manage two things: the gas bottle and the oil life. Beyond that, it's straightforward operation: load, fry, recover, repeat.
The 812mm depth is characteristic of the Evolution series: compact front-to-back, so it doesn't dominate a kitchen layout even at 20 litres. Temperature spans 88 to 193°C, and the two baskets let you stagger cooks—one resting while the other fries.
