Why this free standing fryer earns its place
The Lincat Opus 800 Free Standing Electric Filtration Fryer DM523 is a larger-format commercial fryer built for kitchens that want a wide, dependable frying station with filtration built in. At 600 mm wide, it gives you a 37 litre capacity and a stated output of 57 kg/hr, so it is clearly aimed at heavier service than a compact single-tank fryer.
It is made from stainless steel in a silver finish and weighs 102.1 kg. The fryer runs on 400V with a 22,000 W rated input and is listed as single phase, so it is a serious electrical installation rather than a plug-in unit. The temperature range is 90 to 190 °C, which gives you the control needed for commercial frying work.
The pumped filtration system is the point of difference here. Lincat says the oil can be filtered and the fryer ready to fry again in under 5 minutes, even while hot, which helps keep service moving and maximises oil life. The unit has two baskets and one tank, and Lincat describes the range as heavy duty, reliable, accurate, fast to recover, simple to operate and easy to clean.
