The E3840 produces 58kg/hour versus the E3860's 48kg/hour, and it does it from a narrower footprint (400mm vs 600mm). If you're tight on space but need volume, you get more production. The smaller oil capacity also means lower running costs and faster daily turnover of oil, so fresher product and less chemical breakdown over time.

No. Because you're producing more per basket and the recovery is fast, the math works in your favour. Many operators find they change oil more frequently but use less total oil per week because there's less waste time sitting in the pan between services.

Watch the colour and smell — if it's gone dark brown or smells acrid, it's time. Most busy takeaways swap it every 10–14 days; quieter cafés might stretch to three weeks. Your waste oil contractor can also advise based on what they collect from you.

Technically yes, but the fryer is designed around both. Using one basket means oil cycling slower, which doesn't help — you're better off just turning the fryer down to a lower temperature and running normal service.
