Why this free standing fryer earns its place
This Blue Seal Evolution fryer is built for the pace of a chip shop or casual-dining kitchen — two independent 12 litre tanks mean you're not waiting for one to cool before frying your next batch. At 1085 × 450 × 812 mm, it's a tight footprint; the 74 kg weight means a single operator can reach the controls without strain. The stainless steel and cast aluminium construction is exactly what a fryer should be: hard-wearing, easy to wipe down, built to survive the salt and grease that lives in this machine.
The fryer runs from +60 to +200 °C, a range that covers everything from a gentle oil refresh at the low end to the hard fry temperature you need for double-cooked chips and golden batter. At 17 kW, it's a serious piece of electrical kit — you'll need three-phase 400–415V power, but you're getting the throughput to match: 31 kg of chips per hour across both tanks, running in parallel. The 1" drain valve is full-bore for speed, and the lift-out heating elements mean servicing isn't a nightmare — no hunting for access ports, just lift the element out, wipe it clean or replace it if needed.
The fryer comes with two heavy-duty wire baskets and a rugged basket hanger designed to take the weight of wet, hot potatoes without bending or warping. The vitreous enamel control panel is a detail — it resists the oils and salt that corrode regular painted controls. A front rail protects the operator and keeps splashes off the walkway. It's the kind of equipment that earns its space because it does the job hard and shows up for service every shift.
