THE WORKING VIEW

Why this bains marie earns its place

The Lincat Silverlink 600 BM7XA holds two full 1/1 gastronorm pans at service temperature with the power to keep them steady through the rush. Two wells mean two concurrent holds — sauce and gravy, or two finishes running side by side — without the capacity compromise of a single well. The wet-well design circulates hot water around each pan, so your contents stay at a consistent serving temperature whether you're in a quiet period or hitting a rush where you're loading and unloading constantly.

At 750 mm wide and 290 mm deep, it sits squarely on the pass as a proper workstation. The 4000 W heating element is the difference here: it recovers faster when you swap a cold pan in, maintains temperature more stably under load, and cycles efficiently through sustained service. The front-mounted drain top lets you clear spills instantly without losing heat; you stay working while it stays hot.

Built for high-pace operations where you can't afford a dip in temperature when a new pan slides in. The stainless steel construction takes the wear; the 2-year parts and labour warranty covers the heating, thermostat and drain assembly through real kitchen use.

BEFORE YOU BUY

Questions, answered straight

Power. This model runs 4000 W versus 2000 W on the smaller version. That means faster heat recovery and a more stable temperature when you're cycling pans frequently. If you're running 200+ covers, the extra wattage keeps your sauce at the right temperature even when you're loading and unloading constantly. For lower-volume service, the smaller model is sufficient.

Both wells heat from the same thermostat and element, so they're always at the same temperature. That's by design — consistency. You set the dial once and both pans stay at service temperature.

The pans should sit in the water with about 50 mm of water surrounding them. Too much water and it spills over; too little and the heat distribution gets uneven. Fill with hot water on startup, and top up between services. The wet-well design is forgiving; as long as there's contact around the pan, you're fine.

One well empty, one loaded — no problem. The heat still circulates through both. You're not wasting power running an empty well; you only pay for what you heat. However, having both wells loaded is ideal because the load helps the thermostat maintain a steady set temperature.

The front-mounted drain top sits on the well. When you need to clear debris or do a quick rinse during service, you pull the drain and water runs out. Takes about 30 seconds and you're back to heating. It's designed to be used mid-service without stopping the heating element.

The 2-year parts and labour warranty covers the heating element, thermostat, pump and any internal heating components. If something fails in normal kitchen use, it's covered for repair or replacement. For emergency service or to arrange a loaner, contact Craven Cooling on 01792 732702.
