Why this hot cupboard earns its place
This is a dual-purpose holding unit: a hot cupboard below and a bain marie top all in one footprint. It's built around a GN 1/1 sized bath, which takes standard 150mm deep pans, so it integrates directly into any kitchen running Gastronorm equipment.
The temperature range spans from +31°C (useful for delicate items) right up to +110°C, covering everything from gentle holding of prepared vegetables and proteins to maintaining service-temperature sauces. You run it wet (water bath for moisture-sensitive work) or dry (direct heat for crusting or sauce reduction). The double-skinned design is doing real work here: it holds temperature efficiently and the outer surface stays safe to touch even during a busy service.
Build quality is Lincat's standard — stainless steel with chrome shelf frames. Two chrome shelves come as standard, plus a push bar to make pan removal clean and one-handed. Doors and shelves all lift out without tools, so daily cleaning is straightforward. The whole unit sits at a sensible 912mm height, standard counter depth.
