Why this bains marie earns its place
The Cossiga Linear 5-pan drop-in bain marie is the practical choice for kitchens that want food-holding capacity without an oversized footprint. Five full 1/1 GN pans (530×325 mm each) sit in heated wells held at 75–85 °C by a simple thermostat. That's four working dishes plus one emergency spare, or five smaller items split across half-pans. The temperature range holds chilli, beans, gravies and hot desserts without drying them out — it's engineered to keep food safe and appetising through a full service.
The wet/dry flexibility is built in: run it full of water in each well for traditional bain-marie reliability, or dry with just a cup of water per pan if you're holding delicate items like hollandaise. Most kitchens default to wet because it's forgiving and requires minimal staff training. The overhead halogen gantry with flat-top sneeze screen works the same as the larger model: the lighting shows food properly so it sells itself, and the screen sits flush so it doesn't feel like a barrier.
Drop-in installation means you cut a hole and it sits flush with your counter — clean lines, no wasted space, looks like it belongs there. 304 stainless steel construction throughout handles daily cleaning and lasts for years. The thermostat control is straightforward: one dial, no software, no faffing. At 1825 mm wide, it fits most counter arrangements without dominating the line.
